I always thought that toffee (by definition) is *crunchy*, but my BF insists that the toffee he got years ago in England was soft and chewy... and he complains that he cannot find that type of candy here. I suspect what he's describing is really close to the 2nd site's recipe for 'caramel'. I will do some experimenting. :)

I made the recipe for the French Butter Caramel (aka Caramel with Salted Butter) that's at the site linked above, and it was *fantastic*! Soft, and melt-in-your-mouth good! Thanks again! :)

I used to buy the English chewy Toffees every Xmas at CostCo. Drats they stopped carrying them.

I hope to make this recipe next month that I finally found. It's about 1/3 way down the page, #36 Chewy Nut Toffee.
