RECIPE: Hollandaise Sauce

This is the best ever!

Hollandaise Sauce

2 egg yolks

2 tablespoons water

1 tablespoon fresh lemon juice

1/3 cup cold butter cut into 8 pieces (no substitutions)

1/4 teaspoon salt

1/8 teaspoon paprika

pinch ground red pepper

Whisk egg yolks, water and lemon juice in small sauce pan. Cook over low heat, whisking constantly, until bubbles form around edge of pan. Whisk butter in one piece at a time until completely incorporated. Remove from heat and stir in salt, paprika and ground red pepper.

I pour this over everything...eggs, vegies, fish. I've been craving it for days but keep forgetting to pick up the lemons. Drat!

    Thanks for the recipe. I haven't had Hollandaise in ages. When you pick up the lemons, freeze some of them whole so you'll have lemon juice & zest on hand. The thawed lemons don't work for slices of lemon but the juice & zest are fine from the frozen fruit.

    Here is another version: (My Favorite)
    Blender Hollandaise Sauce:

    Makes 1½ cups. This smooth, creamy sauce is most often associated with Eggs Benedict, but also makes a fine accompaniment to steamed fish and vegetable dishes.

    3 large egg yolks
    Juice of 1 lemon
    1 teaspoon salt
    1/4 teaspoon white pepper
    12 tablespoons (1½ sticks)unsaltede butter, melted and hot

    Place the top of a double boiler or a heat-proof bowl over a pan of hot water on low heat. Place yolks, lemon juice, salt and pepper in a blender with 1/4 cup water. Puree until smooth. While machine is running, slowly drizzle in the hot butter. Use immediately, or transfer to double boiler and keep warm over low heat, whisk occasionally. Do not allow mixture to get too hot, or it may curdle.

    Here's the way I make blender hollendaise.

    Blender Hollendaise
    put 4 egg yolks in the blender
    Add 2 T lemon juice
    Pinch of cayenne
    Cover and blend.
    Melt butter ( don't brown) and when bubbling hot, pour slowly into running blender.

    Linda, that's how I make my hollandaise sauce, too. Comes out perfect every time!!

    Great tip about freezing the lemons, thanks Ginger, I didn't know that. I love to have lemons on hand and sometimes I end up throwing one or two away cause they get to look old and brownish before I use them.

    Thanks for the recipes. Now I know what Sunday brunch will be this week. Just have to decide which to try first. Shamefully, hollandaise has always been Knorr mix in my house.

    And thanks for the lemon tip. I throw a lot out, too, and this winter they seem a bit pricey for that.

    A quick substitute is made by just adding a little yellow food coloring to mayonnaise!

    I love Hollandaise Really delicious on Baked Salmon Loaf or Tuna Croquettes!!
