Cover them with water & freeze in a container. Have enough water so the shrimp are totally submerged.

Well, I wouldn't have thrown it out, it's not spoiled or unsafe, although the flavor and texture might suffer.

I would have made Cindy's Etouffee or something spicy with a sauce out of those and the flavor degradation would probably have been negligible.

BTW, I agree with Ginger on storage. I store freshly caught fish covered with water in containers in the freezer. When they thaw they are still nice.

IMO lucky this is not a good choice for scallops. They seem to absorb the water and the texture suffers. That's my thought, others may have had a different experience.
