RECIPE: Ginger your Empanada recipe

Ginger you kindly posted this recipe for me about 3 or 4 years ago. I made it several times and loved it. Due to a hard drive crash awhile back I lost many of my recipes, seems that this was one of them. Can you recall this one? It was a bit spicy but not overly. Asking a lot to reach back that far but hopefully you know which one I mean!

    I think it was in Taste of the Caribbean written by a friend of mine. I can't find the book & she's not home now but I think my stores have some copies so I'll check tomorrow & post it then, if I don't find the book here. Hope you didn't need it tonight.

    I think this is what you had. I remember you liking them. Here they're called Pates but they are really our version of an empanada.
    VIRGIN ISLAND SPICY MEAT PATES (16-20 appetizers)
    Pastry:
    2 cups flour
    1/2 tsp salt
    1/2 cup butter, chilled
    1 tsp pepper
    5 TBL cold water

    Filling:
    1 lb extra-lean ground beef
    1 large onion, minced
    1 large green bell pepper, minced
    1/2 to 1 habanero pepper, seeded & minced
    1/2 cup unseasoned breadcrumbs
    1/4 cup pimento-stuffed green onion, minced
    6 oz canned tomatoes, drained & chopped
    4 TBL apple cider vinegar
    1 tsp crushed oregano
    1/2 tsp allspice
    Salt & pepper to taste
    1 cup sharp grated Cheddar

    Sift the flour, salt & pepper into a large bowl. Using 2 knives or a pastry cutter (I used a processor), cut the butter into the flour until coarse crumbs form. Work in the water & chill in the refrigerator 1 hour.
    In a large skillet, cook the meat, onion, garlic & peppers. Drain & rinse the meat in a collander using hot water. Most of the fat will run off, leaving the flavor.
    Stir in breadcrumbs, olives, tomatoes, vinegar, herbs & spices.
    Preheat oven to 425°. On a well-floured surface, roll out the dough & cut in 4" circles. Spoon filling into the centers, top with grated cheese & pinch shut with wet fingers.
    Bake on a lightly greased baking sheet until golden, about 15 minutes.~~A Taste of the Caribbean

    Yes Ginger that's it! A fabulous recipe. I've served it many times , the first was a "get to know each other" party for a cruise we where going on. Thanks again!

    This:
    1/4 cup pimento-stuffed green onion, minced

    Should be this:
    1/4 cup pimento-stuffed green OLIVES, minced

    OMG, could you just imagine trying to stuff pimentos into green onions. .....jes' keeding. :))

    Thanks, Jim. I was just referring to something someone sent me a while back that I thought was funny. It obviously didn't keep me away from here.
