I'm looking for a recipe for a brie and gorgonzola torte for a party of about 15 people. Anybody have any good recipes and/or tips on what types of crackers or foods to serve with it? Thanks.
I can't see a thing wrong with the recipe below. I'd use one of those cracker assortments with the different types of water crackers or thin slices of baguette.
Since you line the mold with Saran, any round bowl should work fine. Hope you post how it turned out. It would be a nice thing to be able to make ahead.
It turned out pretty good. I covered it with chopped walnuts and cut the recipe in half, and there was still enough for a small army.
I think next time I make it I may increase the amount of brie and gorgonzola cheeses though. The torte was milder than I expected and lacked any real strong cheese taste. It was creamy and tasted mainly like the cream cheese, butter and scallions to me. Still good, though, and worth a try either way.
I do it very differently. I cut a 1/2 pound small wheel of brie in half horizontally ( it must be cold to do that) then I crumble 4 oz Maytag Blue on top and put the top back on. The recipe didn't call for it...but I really like to put a thin layer of Major Grey's chutney on the brie before I add ther blue and more before I add the last layer of brie. Wrap in saran, refrigerate at least 3 or 4 hours and up to 2 days. Much longer and the brie will start to turn blue! It's great with fruit, or on thin slices of toasted French baguette. Linda C
Well, that sounds good too, linda. I guess I'm the only person that's never used Major Grey's chutney - does it make the recipe? It sounds easy and good. Do you happen to have a picture? I love seeing pictures!
Here is a picture of the torte I wasn't trying to duplicate. If you cut a slice, you'd see a green layer of herbs/scallions in the middle. Ok, I didn't make the carrot flowers; I was going to try cherry tomato tulips instead, but ran out of time so just threw some more walnuts on top. It still made a nice presentation.
LOL! Nope no picture! I never thought of frosting it with cream cheese....but I guess you could and it would make it very pretty. Major grey's chutney is a sweet hot mango and ginger chutney. It's often used as a topping for a brie en croute and I like it with blue cheese on a cracker....and yes, I think the chutney makes the recipe! I just love sweet/hot with cheese! If I were to decorate it I would use something fruity...like perhaps strawberries and kiwi...or kiwi and pineapple.
