You might be able to crumble them up & use as a cheesecake crust instead of vanilla wafers.

There are tips below for softening hard cookies. Might be worth a try.

Or make a classic banana pudding, using sugar cookies instead of vanilla wafers.

Crumble or mash them and sprinkle on ice cream, muffins, coffee cake, etc.

slices - it seems to be the easiest.

Dip them in tea and munch away!...or in milk!....sugar cookies dipped in milk are one of my favorite secret indulgences!
