LOOKING for: Please share your kabob recipes

Hi Everyone,

I am looking for different combinations of kabobs. What's your favorite combo to put on a kabob? Thanks.

    GRILLED CHICKEN KABOBS (serves 4)
    1 cup plain yogurt
    Juice of 1 lemon
    2 garlic cloves, chopped
    1 TBL ground cumin
    2 whole skinless, boneless chicken breasts cut in 1/2" chunks
    8 small yellow onions
    3 TBL olive oil
    Salt & pepper
    1/4 cup chopped parsley
    1 lemon, sliced
    4 bamboo skewers (soaked in water a few hours)

    Combine yogurt, lemon juice, garlic & cumin. Add chicken chunks & refrigerate in a sealed container 8 hours.
    Preheat grill. Peel onions & cut into thick slices. Alternate chicken & onion onto bamboo skewers. Remove excess marinade. Brush w/olive oil & season w/salt & pepper. Grill approximately 10 minutes; turn once & cook until brown & cooked through. Garnish w/parsley & sliced lemon.~~A Slice of Paradise

    To tell you the truth, I seldom mix foods on kebabs because of differences in cooking time. They sure look pretty that way, though.

    Pretty much the only thing I cook on a stick is grilled shrimp. Just slather them with plenty of butter and garlic and grill them just til they are done. (If you use bamboo skewers be sure to soak them in water for a couple hours so they don't burn.)

    I got this one from allrecipes.com, it' really good. And easy. I just use regular feta and it works great.

    INGREDIENTS:

    * 1 (8 ounce) container fat-free plain yogurt
    * 1/3 cup crumbled feta cheese with basil and sun-dried tomatoes
    * 1/2 teaspoon lemon zest
    * 2 tablespoons fresh lemon juice
    * 2 teaspoons dried oregano
    * 1/2 teaspoon salt
    * 1/4 teaspoon ground black pepper
    * 1/4 teaspoon crushed dried rosemary
    * 1 pound skinless, boneless chicken breast halves - cut into 1 inch pieces
    * 1 large red onion, cut into wedges
    * 1 large green bell pepper, cut into 1 1/2 inch pieces

    DIRECTIONS:

    1. In a large shallow baking dish, mix the yogurt, feta cheese, lemon zest, lemon juice, oregano, salt, pepper, and rosemary. Place the chicken in the dish, and turn to coat. Cover, and marinate 3 hours in the refrigerator.
    2. Preheat an outdoor grill for high heat.
    3. Thread the chicken, onion wedges, and green bell pepper pieces alternately onto skewers. Discard remaining yogurt mixture.
    4. Grill skewers on the prepared grill until the chicken is no longer pink and juices run clear.

    this probably sounds weird, but one of my favorite things to grill is brussels sprouts.

    i buy the bag of individually quick frozen sprouts and microwave them for a couple of minutes to defrost/begin the cooking process. thread them on your skewer, spray with canola oil (or whatever you prefer) and sprinkle with tony chachere's creole seasoning. grill until they begin to brown on the outer leaves. yummy stuff. we grill tons of fresh veggies in the summer

    All I can say is this: If you use bamboo sticks or wooden skewers, make sure you water soak the bejesus out of them!

    I have stories or ruining dinner because I was in too much of a rush.

    I like simple ones. One of our favorites is ham/pineapple/green pepper/sweet onion/and maraschino cherries. I serve this with simple steamed rice and sometimes we like homemade macaroni and cheese with them, and it is dinner.
    Another is simple too. Pepperoni cubes/semi-cooked Italian sausage chunks/green peppers/onions/mushrooms/and olives. I serve this with a tossed green salad and Italian bread sticks.

    My favorite is tequila marinated shrimp with big thick cherry tomatoes, chunks of oranges and pineapples, and lots of peppers and onions. About 3 to 4 shrimp per kabob and served with thick grilled corn tortillas called gorditas. I squeeze lemon and lime over my kabobs and gobble them up with the warm corny tortillas. Very good eating this is!!
