LOOKING for: T and T Mango chutney recipe?

Anybody have a favorite recipe that they love? . . . I'm tired of paying ridiculous prices for the tiny bottles in the store. Besides . . . I'm guessing that somebody out there has a recipe that knocks the sox off of the purchased stuff :)

    This is my boss' recipe he makes every year from his own mangoes. I haven't made it because he always gives me some & I can vouch for it. Of course, you should be able to cut it back to smaller quantities:
    BEST I EVER HAD MANGO CHUTNEY
    14 lbs green/ripe mangoes (half of each)
    2 pods garlic
    2 lbs seedless white raisins
    12 oz ginger root
    2 1/2 qts cider vinegar
    2 cups key lime juice (18 limes - regular limes are OK)
    4 lbs white sugar
    4 lbs light brown sugar
    6 TBL salt
    1 cup tamarind paste
    2 TBL ground mustard seed
    2 TBL ground cinnamon
    3 tsp ground cloves
    2 TBL allspice
    1/2 lb blanched almonds (coarsely chopped)

    Cook approximately 6 hours, low heat, stir occasionally until thick. Makes approximately 10 qts.~~ He processes it, of course. He said he modifies this all the time but this is the original recipe.

    Mango Chutney
    30 mangoes
    2 large bottles vinegar
    2 red capsicums
    60g ginger
    60g garlic
    500g sultanas
    500g raisins
    125g dates
    1.5kg sugar
    1/4 cup salt

    Peel and slice mangoes and cover with salt. Stand overnight. Chop remaining ingredients. Add vinegar to mangoes and boil for 20 minutes. Add other ingredients and simmer gently for 1 hour. [Because there's only me to feed, I usually make smaller batches - just keep quantities in proportion.]

    Thank you, Ginger! . . . I already made my batch today from a combination of two recipes; one from Epicurious and one from my canning book. I couldn't find the tamarind extract up here in the wilderness, but I used everything else on your recipe, except for the almonds. I was relieved to see yours called for mustard seed; one of mine did too, so I used it, hoping it wouldn't be a mistake. You are a lucky girl to receive his chutney! . . . and I am a lucky girl that I didn't have to reduce that recipe, LOL! (I have a math allergy)

    Thanks again; I'm happy to have 6 beautiful jars of mango chutney on the counter . . . it kills me to have to pay $5 for a teeny bottle of Major Grey's!
