The closest I could find are the variations on the recipe below using cream cheese or ricotta.

Thank you, seems like that might work... anyone have any idea what i should do with the cheesecake batter? do you think it might be best to freeze it in cubes then wrap the tortilla around it?? thanks

I think Applebees use to make a cheesecake chimichanga but I couldn't find the recipe. You may have better luck looking up recipes for Sopapillas. Here's one with a cheescake type filling.

There is a restaurant here in our town that serves cheesecake chimichanga's as well. I would love to have a good recipe for them. I believe the place that serves them around here freezes the cheesecake batter first, because the center of the dessert always seems to be a bit frozen still. Does anyone know the recipe for the outside coating?

That is the only thing I ever enjoyed at Applebees...they were warm and covered in cinnamon sugar...really good!

Never eaten them....but I would make cheesecake batter,3 half pound packages of cream sheese, 3/4 cup sugar and 4 eggs,1 tsp vanilla....beat well, pour into a greased 8 by 8 pan and bake at 350 in a bain marie until set, about 45 minutes....lay a pices of foil over the pan so it doesn't brown.
Chill and cut into chimi sized strips. Wrap a strip into a tortilla and deep fry them.
