LOOKING for: Cheese crackers or wafers

A few years ago I made a recipe for cheese crackers or wavers. The result was extremely salty to my taste (I don't salt my food after cooking). I don't mind potato chips and other salty snacks but this seemed to be over the top. They seemed much saltier than Cheese Nips which don't bother me at all.

Does anyone have a good recipe for cheese crackers or wafers? I'd like to try again.

    You might like these. Just cut into the shape you like:
    CHEESE STRAWS
    1 scant cup flour
    1/2 tsp baking powder
    1 tsp salt
    Dash of cayenne
    1 cup grated sharp Cheddar
    5 1/3 TBL butter
    2-3 tsp water

    Mix the flour, baking powder, salt, cayenne & cheese. Add the butter & rub in until the mixture resembles coarse meal. Sprinkle in enough water to make a stiff dough. Roll out about 1/8" thick & cut in 3x1/4" strips (or just use a biscuit cutter). Bake on a cookie sheet in a preheated 400° oven for 10 minutes or until slightly brown.~~From Company's coming

    Here's one with no salt at all. I don't add salt to ANYTHING (except pickles and such, where the salt acts as a preservative). IMO, it just isn't needed in most recipes.

    Cheese Fingers
    125g plain flour
    75g grated cheese
    45g butter or margarine
    1 egg yolk
    1 teaspoon lemon juice
    few grains cayenne pepper OR 1/4 teaspoon mustard
    cold water

    Rub the cheese and butter into the flour and mix to a fairly stiff dough with the egg yolk beaten with lemon juice and cold water. Roll out very thin and cut into fingers. Bake at 180C. This mixture may be used to make Cheese Straws or savoury bases of any shape.

    Cheese Straws:
    After rolling out the dough, cut into strips about 5mm wide. Make rings out of the trimmings. When cooked, insert straws into the rings to make small bundles.

    Cheese Savouries
    1/2 cup grated cheese
    1 egg
    2 tablespoons butter
    3/4 cup self raising flour
    1/4 teaspoon salt
    pinch cayenne pepper

    Sift flour, salt and cayenne into a bowl, add cheese, then work in the butter. Mix to a stiff paste with the well-beaten egg. Roll out thinly on a floured surface. Cut into small rounds. Bake on a greased oven tray at 180C for about 15 minutes. When cold, serve with cheese or dips.

    Variations:
    Omit cayenne pepper and add 1 teaspoon dry mustard.

    Omit cheddar cheese and add 1 cup grated blue cheese.

    Add 1/2 cup finely chopped chives and 1/4 cup finely chopped onion.
    Add 1/4-1/2 cup chopped bacon.

    Add 1 tablespoon caraway seeds.
    Add 1/2 cup chopped pecans.

    Add 1/2 cup chopped pumpkin kernels.

    Dust basic recipe or any of the variations in any of the following: toasted sesame seeds, poppy seeds, equal amounts of paprika and parmesan cheese, equal amounts of curry powder and coconut, toasted coconut, cracked black pepper.

    Diane's Home Cookin 4.8 Chapter: Biscuits, Scones & Crackers

    Blue Cheese Walnut Bites
    ========================
    1-1/2 Cups all purpose flour
    2 3 Teaspoons cracked black pepper
    8 Ounces blue cheese
    1/4 Cup butter
    1 Cup chopped walnuts
    2 egg yolks, slighty beaten
    . In a medium mixing bow combine flour and pepper. Using a pastry blender cut
    in cheese and butter until mixture resembles coarse crumbs. Add walnuts and
    egg yolks. Stir until combined. Form the mixture into a ball; knead until
    combined.

    Divide dough in half. shape each half into a log about 9 inches long. Wrap
    logs in plastic wrap, chill at least 2 hours. Preheat oven to 425*

    Cut each log into 1/4 inch thick slices. Place 1 inch apart on ungreased
    baking sheet. Bake for 8-10 minutes or until bottoms and edges are golden
    brown. Transfer to a wire rack. Serve warm or at room temp. Store tightly
    covered.

    Brie Crisps
    ===========
    4 Ounces Brie, rind removed, at room temperature
    1 stick butter at room temperature
    2/3 Cup flour
    2 generous dashed cayenne, or to taste
    1/8 Teaspoon salt
    Paprika
    . Combine the cheese & butter in a processor & mix until creamy. Add the
    flour, cayenne & salt & blend until the dough almost forms a ball in the
    processor. Shape into a 2" cylinder & wrap tightly in plastic wrap.
    Refrigerate overnight. Slice the dough into 1/4" rounds, place 2" apart on a
    cookie sheet & bake in a preheated 400° oven for 10-12 minutes or until the
    edges are brown. Cool on a rack. Sprinkle w/paprika.~~ Sharon said she froze

    I'm up north at our cottage and not at home, but I think the blue cheese crackers is the same recipe as one that I have. And its great! (I also don't add salt to recipes.)

    That's the Brie Crisps recipe I mentioned above. I got it from Beyond Parsley.

    The blue cheese "cookies" are from me.....and they are salty!!...using unsalted butter helps a bit.

    Thanks everyone! All these recipes sound terrific. I know someone who loves blue cheese and loves walnuts so I'm definitely going to try that one too.

    Linda -- Does the unsalted butter in the blue cheese "cookies" alter the consistency at all?

    BTW, the crackers I previously made included salt in the recipe and I thought that was a little strange but added it anyway.... cheddar cheese is plenty salty without adding any extra!
