LOOKING for: A great eye roast recipe please!!

I bought a seamed 6.5 pound eye roast I want to make it tommorrow with mashed poataoes and creamed spinache. Can someone share a T&T recipe to knock your socks off to company! I figured being that we have a huge storm coming in tommorrow this might be nice on a windy rainy day TIA
