Curried Fruit Casserole
Cran (Cooking Forum)
1 lb. can each sliced peaches, apricots, chunk pineapple, sliced pears
1 can mandarin oranges
1 small bottle of maraschino cherries
3 T butter
3/4 C brown sugar
3/4 C chopped pecans
4 t curry powder
Drain and pat fruit dry. Melt butter, blend in sugar, nuts, curry. Pour over fruit and bake 1 hr. 325. Serves 8-10.

I haven't made this yet, but it sounds yummy.

I made another fruit salad last week
3 apples cut in 1 inch cubes, 1 with the peel on for color
3 pears peeled and cubed
1 small can mandarine oranges WELL DRAINED
1 20 oz can puneapple tidbits wELL DRAINED
1 small carton blueberries
1 can wilderness apricot pie filling.
Mix, refrigerate about an hour for flavors to mellow and serve.

This is one I've made more than once to good reviews & it has curry powder in it:
CURRIED FRUIT (serves 8-10)
28 oz can pear halves
28 oz can sliced peaches
16 oz can pineapple chunks
4 oz jar maraschino cherries
16 oz can green grapes
28 oz can plums, optional

Drain fruit. In a large bowl, combine all ingredients & pour into a 9x13" glass baking dish. Pour dressing over fruit & bake in a preheated 350° oven for 30 minutes.~~

Dressing:
1/2 cup butter
1 cup brown sugar (packed)
Juice of 1 lemon
1 tsp curry powder (I use a bit more)

In a saucepan, combine all ingredients & heat to boiling.~~Bound to Please

I've made this one for years, always to rave receptions. It can be served hot, or chill it and serve with lightly whipped cream:

Curried Fruit

1 can each: Peaches, pears, apricots, pineapple, oranges.
Chunks of bananas.

Mix with: 1 cup brown sugar, 2 tsp curry powder, 1 tbls flour. Pour into casserole or baking dish. Dot with butter. Moisten fruit juice if needed.

Bake 1 hour at 350 degrees.
