LOOKING for: Jackie Kennedy's Pakistani Chicken
Now how's that for an obscure recipe?
My mom cut the recipe out of either the Washington Post or the now-defunct Washington Star in 1962. Supposedly Jackie brought it back after the Kennedys visited India and Pakistan that year. This recipe is very similar (and there is a Jackie connection), with a few major differences noted below:
Hammersmith Farm's Spiced Chicken (Jackie Kennedy)
4 servings
5 ounces plain yogurt
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground cardamom
1 garlic clove, crushed
salt
pepper
3 lbs chickens, quartered
Mix yogurt and all the spices together.
Add the chicken pieces and marinate, at room temperature, for 3 hours.
Line grill with foil and put chicken pieces on rack.
Grill for 20 minutes or until chicken is cooked.
The recipe my mom used included sliced onions. The chicken was marinated overnight, and was baked rather than grilled. I'll probably just use the recipe printed above, and make those changes - but it would be really cool to have the original one to send to my sisters & brothers!
