Are you thinking of turnovers? Here's one I saw at a link here recently.

There is a pic a little ways down the page. It's peach, but you could adapt it a bit and substitute apple.

That peach turnover looks really good, too. I have plenty of apples, so I may try both.

If anyone has made a galette, I'd love a tried and true recipe. Also, have you ever made a meat pie galette?

My mom frequently makes a blueberry galette with sugar sprinkled on the top of the crust before it is baked - yum!

Not sure if a meat pie would work well in this case. I'd make Cornish pasties instead.

An apple gallette couldn't be easier.
Just make your pastry crust ( 1/2 cup butter, 1 1/2 cups of flour...cut in together...toss in 3 T vodka and then enough ice water so it hangs together....about 3 more tablespoons, make a ball and refrigerate while you peel the apples.
Peel and slice about 4 cups of apples, toss with sugar, flour and cinnamon....the amount depends on how sweet the apples are...1/4 cup is a good guess, and maybe 3 T flour and a teaspoon of cinnamon.
Roll out your dough into a1 2 inch circle, place on your baking sheet, parchment is a good thing here, pile the apples in the middle, fold the crust over, and bake in a 375 oven until golden and bubbley. I like to sprinkle with sugar about 1/2 way through the cooking.
You can also make small one serving gallette pastrys.

Thanks to all of you. Linda C, your recipe reminded me of watching my grandmother make a pie. She'd put the fruit in the bottom crust (made with lard, of course) then sprinkle sugar, flour and cinnamon on top the apples. Dotted it with butter and topped it with the other crust. I sure miss her AND her pies!!
