LOOKING for: Roasted broccoli ...chopped? Have you ever done thi

My workmate told me she did this recently and yet short of trying it and maybe wasting a darn good fresh head of broccoli from the market, I am doutbting.

She said she chopped up a head of brocolli into small pieces and did the olive oil s&p herb toss with her hands. I don't recall what temp but prob a 350ish on the cookie sheet.

I guess this really isn't so different from roasted asparagus but I've just never seen or done it myself. She swore it was wonderful and sweetish as most roasted veggies are. Any experience with this 'recipe' out there?

    Thanks Pink. That was close tho his recipe called for steaming the broc first. I wanted a dry roast which I guess after you rinse the oil coats the moisture in?

    I did find another one on foodtv and forged ahead. The dinner hour calls!

    I rinse it after cutting in equal sized pieces, drizzle with olive oil, salt and pepper and roast it at 400° for about 10 minutes and sometimes drizzle it with balsamic vinegar; I never steam it first. I like a bit of crunch.

    We love roasted asparagus and never thought about broccoli, but I bet it would be just as good.

    I often roast broccoli and have for years. I would not chop it! We like it cut into pieces about 2 inches long, toss with EVOO, kosher salt and fresh ground pepper and lay out on a baking sheet in a single layer. Roast at 425 for 10 to 15 minutes. I like to do this when I serve it with cheese because the broccoli doesn't get watery like it can when it's steamed.

    Thanks for that tip, Marilyn. I never thought of doing it that way, I just boiled the broccoli until tender and added the cheese sauce. Often I get a cheese/broccoli soup.

    Well my picture tells you that it cooks quickly this way, and I wouldnpt add the small florets till the last 5-7 min. Mine was overcooked...VERY crunchy but dh loved it and finished it off.

    The other stuff is plain rice (leftover from a chinese meal doggy bag) and roast porkloin and onion/apple saute. It was a tasty fall meal, esp with the apple tart samples.

    I roast broccoli all the time, cut up in pieces coat with some olive oil, sprinkle with dry crushed red pepper and add some roasted garlic pieces (a lot for me) or just sprinkle with garlic powder, roast at 375 until it just starts to brown, it is delicious, sometimes I do a mix of broccoli and cauliflower.

    I don't usually roast asparagus but I throw it on the grill a lot. I just trim, brush with some olive oil and grill until very tender, sprinkle with sea salt and it's ready to enjoy.

    I roast broccoli all the time too, but I wouldn't chop it either. It's delish!
