RECIPE: Holiday 'Give away' cakes

I would like to give individual "loaf type" cake for the Holidays. Would like them to be something other than the usual bananna, choc, etc. Anybody got any killer recipies?

    I make a honey pecan bread....
    OOPS! Sorry....it's honey walnut bread....but I most often use pecans...
    Scald 1 cup milk and add 1 cup honey and 1/2 cup sugar anfd stir over medium heat until the sugar is dissolved....cool mixture.
    Beat in 1/4 cup soft butter and 2 egg yolks.
    Sift together 2 1/2 cups sifted flour ( measure after sifting) and 1 tsp salt and 1 tsp soda.
    Stir the flour into the batter and beat very well, like for at least a minute, more is better.
    Stir in 1/2 cup chopped nuts, and pour into buttered and floured loaf pans. ( I make 2 of the small sized loaves) and bake 325 for an hour until the loaf tests done ( a cake tester comes out clean and it begins to pull away from the edges of the pan.
    Cool and turn out. Wonderful sliced thin and spread with soft butter.

    Pound cakes are good choices. They keep well also & can be baked in individual loaf pans. Just adjust the baking time. Most can be frozen too.

    THREE FLAVOR POUND CAKE
    1/2 cup shortening
    2 sticks butter, softened
    3 1/2 cups sugar
    5 eggs
    3 1/2 cups flour
    1/2 tsp baking powder
    1 cup milk
    1 tsp rum flavoring
    1 tsp coconut flavoring

    Glaze:
    1/4 cup + 1 TBL water
    1 cup sugar
    1/2 tsp almond extract

    Preheat oven to 300°. Grease & flour a Bundt pan (or your mini loaf pans.)
    Cream together the shortening, butter & sugar. Add the eggs one at a time, beating well after each addition. Whisk together the flour & baking powder. Add the dry ingredients to the shortening mixture alternately with the milk, beginning & ending with the flour. Beat in the rom & coconut flavoring. Pour into the prepared pan & bake 1 1/2 to 1 3/4 hours (less for mini pans.) Don't open the dorr more than necessary.
    Shortly before the cake is removed from teh oven, make the glaze by bringing the water & sugar to a rolling boil. Remove from the heat & add almond extract. Pour the hot mixture over the hot cake & let stand until cool. Remove from pan.~~ From Necessitites & Temptations.

    Thanks for the ideas. Since I'm new to this I can use all the help I can get. Such as: how much batter to put in the little pans. I usually just use regular sixe and never gave any thought to how to fill the minis. I'm going to use the one that you get in the super market. Foil and come with snap on plastic lids.

    Ginger, I make a 5 flavor pound cake-put 1 tsp each: vanilla, butter, almond,coconut, and rum extracts in the cake and then the same extracts in the glaze. Good cake, isn't it?

    Fill the pans about 2/3 full.....and watch....as those small foil pans seem to cook faster than a pyrex pan does.

    Ooooo, 5 Flavor Pound Cake is one of my favorites!

    This recipe should do nicely in those mini foil loaf pans:

    Double Chocolate Snack Cake

    1 2/3 c. flour
    1 c. light brown sugar, packed
    1/4 c. cocoa
    1 t. baking soda
    1/4 t. salt
    1 c. water
    1/3 c. oil
    1 t. vinegar
    3/4 t. vanilla
    1/2 c. chocolate chips

    Heat oven to 350 F. Grease and flour your mini loaf pans, maybe 5-6? (This was originally done in a 9x13 pan.) Combine dry ingredients in a bowl. Add wet ingredients and beat smooth. Pour into pans. Sprinkle chips on top.

    Bake 15-20 minutes - check pans earlier, about 12 minutes. Test with a pick in the center to see if it comes out clean. Cool the pans on a rack 10 minutes, then turn out of pans and cool completely.

    I've got another good quick bread recipe - if I can find it.

    Here is a really good sweet bread that does very well in mini loaf pans.

    Pumpkin Apple Bread - makes 6 mini loaves

    3 c. all purpose flour
    3/4 t. salt
    2 t. baking soda
    1 1/2 t. cinnamon
    1 t. nutmeg
    1 t. ground cloves
    1/4 t. ground allspice
    1 16 oz. can pumpkin (not pumpkin pie filling)
    3/4 c. vegetable oil
    2 1/4 c. sugar
    4 large eggs, beaten
    2 Granny Smith apples, chopped, about 2 cups

    Preheat oven to 350F. Grease 6 mini loaf pans. In a large bowl sift the flour, salt, soda, spices. In another bowl blend pumpkin, oil, sugar, and eggs with a whisk. Add the flour mixture to the pumpkin mixture until well combined. Fold in apples and divide batter between the pans. Gently hollow out the center of the loaves and fill with this topping:

    1 TB flour
    1 TB butter, softened
    5 TB sugar
    1 t. cinnamon

    Blend topping in a small bowl until crumbly. Sprinkle some topping on each loaf. Bake at 350F for 30 minutes. Test for doneness with a toothpick. Cool in pans on a rack for 45 minutes. Remove from pans and cool completely. Keeps chilled 1 week, frozen for 1 month.

    I've made this recipe several times. Always turns out well, and tastes delicious. A nice little gift.

    Gum drop fruitcake! I would love to give credit where credit is due but I can't remember who I got the recipe from. I have used it for a few years now, and we start getting "reminders" in early december so we don't forget to put it in the cookie boxes LOL.

    This tastes like what I imagined fruit cake to taste like when I was little. It tastes like good fruitcake LOOKS to a little kid ROFL.

    Gum Drop Fruit Cake
    4 cups flour
    1 tsp cinnamon
    1/4 tsp ground cloves
    1/4 tsp ground allspice
    1/4 tsp ground ginger
    1 1/4 tsp baking soda
    1/4 tsp salt
    2 pounds chopped gumdrops
    1 cup butter or margarine
    1 cup chopped pecans, toasted
    2 cups sugar
    2 eggs, well beaten
    16 oz applesauce
    1 tsp vanilla

    Mix flour, spices, baking soda, and salt.
    Coat the gumdrops with some of the flour mixture.
    Cream butter and sugar until fluffy.
    Combine eggs, applesauce, and vanilla.
    Add apple sauce mixture and flour mixture to the creamed mixture alternately.
    Stir in gumdrops and toasted nuts.
    pour into a greased 9x13 pan and bake at 300 degrees 1 1/2 to 2 hours (until a toothpick tests clean).

    I bake it in the 9x13 then cut it into 8 smaller blocks (kind of mini loaf size) but you can divide the batter into mini loaf pans and start checking earlier. Maybe 45 minutes to an hour? Or even 3 or 4 regular loaf pans. In fact I think the original recipe may have called for loaf pans.

    Use lime, lemon, orange, and cherry flavoured gum drops but no mint, grape, or black ones. Once I could not get gum drops and used gummi bears LOL. They worked fine, although the cooled gummi bears welded to my glass dish so watch for that if you try them - tee hee! I have also cut up those jelly citrus slices. We love the flavour the red gumdrops give the cake and it stores well. This year I am going to try the small "baking gums" gumdrops from the bulk food store and not chop them.

    I have used both butter and hard stick margarine and both turned out fine. I take a small chunk off the measured amount, melt it in a small skillet and toast the pecans that way. Do not skip toasting the pecans, it really makes a difference in this recipe!

    This recipe will make six mini loaves. Bake at the same temperature, check for doneness at 20 minutes, but they may take 30 minutes.

    Poppy Seed Bread

    3 c. all purpose flour
    2 c. sugar
    1 1/2 t. baking powder
    1/2 t. salt
    1 TB poppy seeds
    1 1/2 c. milk
    3 eggs
    1 c. vegetable oil
    1 1/2 t. each vanilla, almond, and butter flavoring
    Mix all in a big bowl. Bake in 2 greased and floured loaf pans at 350F for 45 minutes. Glaze ingredients:

    3/4 c. powdered sugar
    1/2 t. vanilla extract
    1/2 t. butter flavoring

    Mix all smooth, add enough milk to make a spooning consistency. Drizzle over cooled loaves.

    Very similar to Ginger's
    Here you go.:
    2 sticks butter
    1/2c shortening
    3c sugar
    1tsp coconut extract
    1tsp rum extract
    1tsp butter extract
    1tsp vanilla extract
    1tsp lemon extract
    1tsp almond extract (opt)
    1/4tsp salt
    5 beaten eggs
    3c unsifted flour
    1/2 tsp baking powder
    1c milk
    Cream butter, shortening, and sugar til light. Add extracts,sifted dry ingredients and add alternately with milk.
    Spoon into a 10" greased tube pan and bake in preheated 325° oven for 1 1/2 hrs.
    Glaze with:
    1c sugar
    1 tsp each extract that you put in cake
    1/2c water.
    Bring to a boil and pour over warm cake.

    Michaels Craft Store had little ceramic loaf pans for $1 each. Really cute to give as a gift and they can keep the little loaf pan.

    I used to have a recipe for chocolate chip pumpkin bread, omg so good!

    Let me see if I can put my hands on it real quick....stay tuned.

    I found it!!!

    CHOCOLATE CHIP PUMPKIN BREAD

    3 cups flour
    1 tsp salt
    1 tsp baking soda
    2 tsp cinnamon
    2 cups sugar
    2 cups canned pumpkin
    1 1/4 cups oil
    4 eggs
    1 1/2 cups semisweet chocolate chips

    Preheat oven to 350° Grease mini loaf pans.

    Combine dry ingredients in one bowl. In another bowl, beat eggs, sugar, pumpkin and oil. Stir into dry ingredients until moistened. Then add chocolate chips.

    Pour into pans.

    Bake approx 1 hour. (toothpick test to make sure they're done)

    They were cheap - maybe .99 or less? I had to buy one, it's the perfect size for tea bags in envelopes and packs of Splenda.

    Some of the decorations were goofy, but I got one with a pretty light blue herb-looking vine thing. I'm a sucker for little bowls and containers at GR and the dollar stores for real cheap! LOL! I convince myself "it's only a dollar!"

    My personal notes are in italics/

    Here's two from my grandmothers recipe box. I try to make them every year.

    Jam Fruit Cake
    6 eggs
    2 c sugar
    1 c butter or marg
    4 c sifted flour
    6 T buttermilk
    2 c flavored jam
    1/2 pkg dates
    2 t cinnamon
    2 t nutmeg
    2 t cloves
    1 t allspice
    2 t baking soda
    1 box raisins
    2 c walnuts
    Cream sugar and butter.
    Add eggs one at a time, beating well.
    Add jam.
    Add buttermilk with soda in it.
    Add flour and spices. Mix well.
    Dredge the fruit and nuts in some of the flour and mix in...(she doesn't state to reserve any.) LOL
    Pour in a large angel cake pan lined with wax paper. Bake at 275F for 2 1/2-3 hours.
    (I make it in mini loaf pans and bake at 325 until done. Sometimes I need to put foil over the batch to keep from getting to dark on top.)

    Apple Crunch Cake
    Double Batch
    4 c chopped, peeled apples
    3 c flour
    3 c sugar
    1 1/2c oil(crisco)
    3 eggs
    1 T cinnamon
    1 T baking powder
    3/4 t salt
    1 1/2c chopped nuts

    Single Batch
    2c
    2c
    2c
    1c
    2.
    2t
    2t
    1/2t
    1c
    Combine all ingredients in order. Mix well!!!! Will be quite thick. Put in 9x13 pan (about 2" deep) Bake at 350F about 1 hr 15min.
    Thick and Moist!!!
    Again, I make in mini loaf pans. And don't ask me how the single batch works, LOL I only make it in the double batch formulation.

    Here's one that I often make at Christmas time. It is very flavorful.
    Orange Loaf
    Bake in 9x5x3 inch greased loaf pan at 350 degrees for 1 hour

    1 small seedless orange, washed and unpeeled.
    6 oz. pitted dates
    orange juice
    1/2 cup hot water
    2 TBLSP butter
    1 egg
    2 cups flour
    1 cup sugar
    1 tsp. baking powder
    3/4 tsp. salt
    1/2 tsp. baking soda
    3/4 cup chopped walnuts

    Combine orange and dates in a food processor until finely ground. Just do it, trust me, it will turn out good!

    Combine juice drained off of orange and date mixture with enough extra orange juice to make 1/2 cup.

    In a saucepan, heat juice, water and butter until butter melts. When cooled, add the egg and date/orange mixture.

    Combine this liquid mixture with the rest of the dry ingredents and nuts.

    Bake in a greased loaf pan one hour at 350 until cakes tests done.

    Wow, I love all of these recipes and plan on baking about everyone for Christmas Gifts. One question, have you had any luck with freezing these so you can bake in advance?

    I'll be making mini loaves to give to co-workers and will attach a Dunkin Donuts gift card. The Christmas Tree shops had the Christmas themed ceramic loaf pans for $1 each. They are very cute.
