RECIPE: making flan in a steam oven

I would like to adapt my Mom's recipe for flan to my Gagganau stem oven. Has anyone made flan in a steam oven? She makes it in a double boiler, not individual ramekins. For thanksgiving, I would like to make pumpkin flan. My main concern is not the ingredients but the cooking temp, steam level and time.
