WANTED: polenta recipes,

Hello, I am newbie here in cooking, usually hang out in gardening, and garden junk.

I bought some coarse ground polenta at health food store and need recipes.

I steamed 1/2 cup dry in chicken broth yesterday and added it to broccoli casserold, you could not tell it was there.

I used to make a souffle called "Spoon Bread" w/ corn flour, great w/ butter and maple syrup.

VangY plays in the dirt & enjoys experimenting w/ food.

Here's a basic recipe from Craig Claiborne. Add cheese, butter or whatever you like to it:
BASIC POLENTA (about 4 cups)
1 qt water
1 tsp salt
1 cup cornmeal

Bring about 2 1/2 cups water to a boil in the top of a double boiler over direct heat. Add the salt.
Mix the cornmeal with the remaining water & add to the boiling water. Reduce the heat & cook, stirring constantly until the mixture boils.
Place the pan over boiling water & cook, covered about 45 minutes, stirring occasionally.~~
