I would make a mess of scrambled eggs, with some sauteed onion and peppers.....lay out a flour tortilla on a square of foil wrap, put on a slice of ham and some grated cheese, a portion of egg, roll up, wrap in the foil and stack. They should reheat very well and be very quick and easy to make.
If you want to mess with variety, you could have some topped with salsa.....and use a slice of turkey instead of ham.
You ought to be able to whip out a hundred of those things in no time.....with some help!

I do a breakfast burrito with scrambled eggs, bulk sausage (cooked and crumbled), and cheddar cheese. The kids love them. I also use fajita sized flour tortilla.

You can buy tin foil in sheets, which would make the prep and presentation a breeze.

Every thing except the assemble could be done ahead of time. Also, a hint I picked up years ago, put the hot foods in a cooler -- its insulated, and will keep the food warm -- then you don't need too much time in the oven, just enough to slightly melt the cheese.
