RECIPE: Fruited Chicken 'n Rice Salad

Hi - - Awhile ago (few months?) I asked if anyone had this recipe. It was one that I pulled out of a magazine ad years ago and had lost it. Well, now I've found it! So I'm posting it here for you. My chicken and my rice pilaf are both cooking right now!

Fruited Chicken 'N Rice Salad

1 pkg. (7 oz) Near East Rice Pilaf (Original)

3/4 cup mayonnaise

1/2 cup orange marmalade

1/4 cup sour cream

2 to 3 tbsp. lemon juice

1 1/2 tsp. curry powder

2 cups cubed cooked chicken

2 medium Red Delicious apples, cubed (leaf peel on for color)

1/2 cup raisins

Salad greens

Toasted slivered almonds

Prepare rice pilaf according to package directions. Place in large bowl, cover and chill. For dressing, combine mayonnaise and next 4 ingredients. Cover; chill to blend flavors. Combine rice pilaf with chicken, apples, and raisins. Add dressing and stir to coat evenly.

Serve on greens; garnish with toasted slivered almonds.

Makes 6 servings (about 8 cups)
