Eileen....what kind of brie is it?? I good quality perfectly aged wedge from a 2 kilo round? Or one of those 6 oz rounds that never really age properyl without turning into a lot of rind and very little soft center?
If it's the latter...smear it with some butter and pack on some slived almonds and bake at 425 for about 7 minutes, drizzle with a little brandy and flame it.
If it's a lovely wedge of a perfect 2 kilo wheel....just let it come to room temperature and serve with rounds of toasted French bread....too good to mess with.

For company I put mine into the oven on a pan for about 10 minutes at 350. Then I put on plate with a selection of breads and crackers, and top with a cranberry compote. There's never any left. Yum!

This sounds good and easy--haven't tried it myself, though.

BRIE WITH FRESH RASPBERRY

5 oz. Brie cheese
15 Athens® Mini Fillo Shells (1 box)
15 fresh raspberries

In a food processor, pulse Brie cheese (including rind) until smooth. Spoon 1 rounded teaspoon of Brie into each Fillo Shell. Top with one raspberry. Bake in preheated 350¯F oven for 5 minutes or just until cheese is melted. Serve warm. Makes 15 Appetizers

Linda I know nothing about BRIE so here goes...its a 19.6oz double creme from cows milk.....I like the other thread too so many choice TIA
