looking for: tt bbq beef or other inexpensive crowd pleasers

Hubby's 50th is Thursday and he finally relented, so I invited family and a few close friends over. Will have a few appetizers and finger desserts, but maybe might like to have something a bit more hearty for those that weren't able to eat dinner before coming by. Have a good soup I might make- could be a bit pricey for 25+ people, but wondered about a good BBQ beef recipe that I could make in the oven or a roaster and have buns available - don't have a crockpot.

Any ideas gratefully accepted!

Thanks- Cindy

I have made a turkey BBQ thing. I cook a turkey, save the stuff in the bottom of the roaster. When the turkey cools, pull it off the bone and put it back in to the roaster ( skim the fat off the pan drippings) and add to it finely minced celery and onion, catsup, a 1/4 cup or so of vinegar and about 1/2 a jar of sweet pickle relish.
Taste for seasonings and salt and pepper to taste.
I wish I could give you a "recipe" but it depends on the size of the turkey.
Anyhow....put the celery, onion, pickles, vinegar and some of the drippings into the roaster. Cover and put into a 300 degree oven. Add more of the drippings as needed.....or if you don't have enough, add chicken broth.
When the veggies are done, the sandwich stuff is done.
You can get a lot of sandwiches out of a $12 turkey! Serve on buns with pickles, tomatoes, lettuce and whatever else you think of.

I also make BBQ with chuck roast. I usually use the crockpot, but it's not necessary. I simply roast the chuck, covered, until it falls apart, then shred it with a fork. Add a bottle of your favorite BBQ sauce or your favorite home made one and serve on buns.

It's quick, inexpensive and everyone seems to like it.

Happy birthday to the hubby, and I hope the "party" goes off without a hitch.

I make something very similar to what annie does except I use pork shoulder.

I dry rub the pork, put it in the crock pot (no additional liquid) and cook it on low for 10 hours. Pull the meat out and defat and shred. Dump the liquid form the crock pot and put the shredded meat back in with several cups of either homemade or bottled BBQ sauce.

    Good luck!

Here's a recipe that woodie posted a while back.

    BEEF BRISKET

My never fail brisket from Sara Moulton:

    1 Beef Brisket, any size
    Salt & Pepper
    Thinly sliced onion
    Minced garlic
    Mix together:
    1/2 cup ketchup
    1/2 cup chili sauce
    3 TBL brown sugar
    1 bottle beer

Lay meat in oven going baking dish. Salt & pepper it, spread garlic over top, spread onions over the garlic. Pour sauce over the meat. Cover tightly with foil and roast at 300* for 3 hours if small 1/2 brisket or 4 hours if large, whole brisket. Uncover, let meat rest, and pour gravy into a saucepan. Puree with handheld blender, or pour carefully into blender and puree. Slice meat across grain and serve with gravy. (The gravy comes out nice)

If you think it needs more BBQ sauce, have a bottle of Masterpiece handy. Excellant recipe!

My suggestion would be Pulled pork instead of beef if you all like and eat pork...You can buy pork butts pretty cheap here in TX ...lots of the markets use them as loss leaders...put them in the roaster and make pulled pork...did it for a party this weekend and it was soooooo good...

Ruthie, how do you make your pulled pork?? Being a Yankee, it sure sounds good to me.
    Thanks.

I want to be able to enjoy the celebration and not stress anymore than I already am, so I wanted simple and easy and I can't thank you enough ! Hubby didn't want a party at all, but I couldn't leave it alone-now I just need to stay calm - HA!

You know my dad would love the brisket but is allergic to beer. Any ideas on a substitute? Apple juice? V8 juice? Wine?

I've done the turkey breast barbeque the way Linda does...the NC style I like. Turkey has less fat than pork of course but it comes out tasting quite similar. I thought I had the recipe here but it must be at home.
