Drywall behind kitchen sink

Hello all.

First of all I live in south Florida so freezing is never a problem.

I have new kitchen cabinets being installed. During the install of the base cabinets we discovered how bad the walls are. The wall behind the sink is not at all straight and in order to avoid placing the cabinets a full inch from the wall my contractor cut out some of the drywall leaving about a 2 foot my 2 foot area open to the open block wall (exterior wall). So behind a portion of this cabinet there is no drywall or concrete. The water lines and drain pipes run down the concrete wall under the slab.

Should I be concerned about this? Can we fill the space inside the block with a foam insulation?

Thanks

Warren
