Well, it sounds lovely, but have you ever actually sat on velvet? With a banquet, people have to scoot in and out, not to mention food droppings or stains. Velvet is not a good fabric for that kind of wear. If you want something that has a velvety look but will wear better, I'd suggest you look at some of the microfibers available. There are so many different styles to choose from now. If that isn't a direction you want to go, you should probably look at a blended upholstery fabric.

I would not choose a velvet for any seating area which will be often used, especially with people who will be eating anywhere near it. Velvet also shows 'butt prints'.

As lukkiirish mentions, some of the microfibers would be a much better choice for durability.

Are you working with an experienced upholsterer? They can help you navigate the durability of the fabrics you are considering. Velvets can be very tough and durable - I have two velvet chairs that get heavy use from my teenage sons and friends and there is no wear, stains or butt prints. A bigger consideration would be how easily an eater can slide into their seat and how hot or cold the fabric feels against the skin when sitting. Velvets might not work so great then.

Have you looked at Crypton fabrics? Damasks? If your looking at greens there should be a lot of choices out there. Another option that is a little OT is outdoor fabric - I know that can feel stiff but I went with fabrics designed for yachts and boats because they are still sun, stain and water resistant but are soft to the touch, like regular upholstery. Great Lakes Skipper carries a large selection and you can get samples. I used a Glen Raven fabric on my outdoor cushions and even bird poop wipes up without a problem. It's just another option you might not have considered.
