Gas VS Electric

I've never cooked on gas, but have been told its so much better than electric. The difference for our new kitchen plan is minimal - what do you think? I love the idea of a gas range, but not sure yet. HELP!!!!!!

There a several lively discussions about this over in the Appliances forum.

Of course you could pick induction, which is the best of both....

If you have 220 volts, I would agree, get induction- especially if you live in a hot climate. Otherwise, I prefer gas and love my Bluestar gas range.

It depends on your needs / budget / etc. Do you want a high end pro style range? Or a more standard type range? Whats more important - the rangetop or the oven or both?
Do you bake a lot / cook a lot / do a lot of stir frying / etc.

I say go with gas. I have cooked on both and prefer gas all the way (except for my oven for baking). I am switching my kitchen from all electric to gas for the range cooktop (dual fuel range is what I am getting). Cost was minimal and I am so excited to be finally be cooking on gas again after 25 years of cooking on electric!

I think gas is the way to go. I am sooooooo happy to have gas to cook on again, since it has been since living at home with my parents (in HS) that I have had the luxury! I have never used induction, and certainly heard it praised, but it did not seem a worthwhile expense to me since I have been aching for a gas range for years.

I love cooking with gas. Once I switched from electric to gas, there was no going back!!

I love gas. As soon as our current stove dies and/or we find room in the budget for it, I'm switching back. It does take some practice to get used to. Getting some good cast iron pans really helps.

One thing I guess I'd add, since pbrisjar mentioned it too- if you have never cooked on gas, it does take an adjustment, but it is so much more comfortable and functional than electric once you get the hang of it, that the learning curve is worth it. I cooked on gas all through childhood, and it is like riding a bike- it just comes back. But I did sort of forget that my BF has never cooked on gas, so we have had a few things scorched these last few weeks- but he's getting used to it. I think it is much harder to deal with electric, if you prefer gas, than it is to go to gas, if you are used to electric.
