Usually a satin stitch is a wide zig zag set on a narrow stitch length.

On most machines you simply create one by using the zigzag stitch and setting the stitch length very close together. If you do a lot of heavy satin stitching you might want to invest in a satin stitch foot as it leaves space for the thread buildup and will prevent the fabric from bunching up under the presser foot.
