Yes, you can replace the meat with lentils on a 1:1 ratio. You might want to add some seasonings to the lentils, since they have less flavor than the meat. If you do add salt, be sure to not add it until the lentils are done cooking or it can toughen the skins a bit.

I'd still add the rice.

Thanks for the tip on the salt; I love lentils but don't use them as often as I should. I have a decent sized arsenal of spices, so I'm sure I can come up with something good.

I cook my lentils in unsalted veggie broth--yummy!
