Water base poly has come as close as anything I have used. I have pieces made from maple and pine that are 10+ years old that I am pleased with how little color has changed. There is sugnificant difference depending on exposure to sunlight. UV resistance has come a long way in recent years but not so much where the finish is water clear.

You might slow it down some with a highly UV resistant finish, but it will be a losing battle. If you don't like the amber color of the pine you need to choose a wood that doesn't change as much with exposure to light and oxygen. Holly, for example, is best known for staying white, but not very available in large boards. Paint and faux graining can achieve a pretty permanent light wood look.
