Check out the finishing and edge profiles that Schluter Systems makes. They have several different profiles in various finishes ( chrome, stainless, bronze etc.) and some different sizes. http://www.schluter.com/139.aspx
You can purchase them through tile stores or at some big box stores. I bought mine at a home improvement outlet store. They were either 8 or 10 feet long and can be cut to the size you need.
I just have tile behind my cooktop so I used the Schluter edging on each side from the countertop up to the ceiling. It works great and provides a nice clean straight edge.

Jkoebnik, since they're already there, how about finishing it with one of the same painted wood trims that are elsewhere in the room? For continuity.

That Schluter edging also comes in a style meant to follow curves (the inside of the rail has triangles cut out of it to allow graceful bending), just in case that would be useful.
