Empty Space Solution Rd II

Thanks to everyone who responded to my post about what to do with the empty space in our kitchen ceiling. Once we take out the fluorescent monstrosity of a fixture there is about a 5 inch recess. Our ceilings are 7 1/2 ft tall and that area would then about 8ft. I loved how maddielee's lighting looked and we wanted to go in that direction.

Then I measured my space to mark approximately where our lights should go and it got ugly. 3ft from the wall is the lip of the recess, that doesn't work. 2 1/2 feet from the wall would put the next light at 4ft away 2/3 of the way through the recessed box and I thought that might look odd. I measured again and the

These are the options I have come up with.

1. Hang one or two light fixtures in the middle of the recess and then recessed light on both sides. If you think this is a good option, one or two lights and any ideas for what type of lighting fixture would be fantastic

2. Figure out a lighting plan with the recess that doesn't look wonky

3. Drywall over the recess and then evenly space the recessed lights. Not my favorite option because of the additional costs and our ceilings are low I hate to lose that additional height in the middle of the room.
