Layout review please

Hi all! I'm hoping you can do a review and make sure I'm not missing something. We don't think the layout of the kitchen part is changing much, except that we're moving the dishwasher to the left of the sink from the right and changing the pantry area. We are on a slab foundation and don't see a need to move the gas oven or refrigerator. It is an interior kitchen with no windows to the outside. We may put in a sola tube or a skylight. I actually like the layout and it works well when I'm cooking. Right now we use the peninsula for most of our prep which is why I'm putting the trash can drawer in there. We are taking down the soffits and putting cabinets to the ceiling - only 8ft. We are also removing the upper cabinets on the wall leading to the family room and taking down that part of the wall. The door in the middle of the plan leads to the master bedroom. It cannot be moved due to the layout of the bedroom/sitting area. One big question mark right now is the pantry area. I have 42 inches to work with. Suggestions?

I also have a problem with the peninsula. I really want a double trash cabinet but I'm not sure if that's 12, 15, or 18 inches. I don't know what that leaves me for cabinets next to it. My husband hates the current door on the other side of the peninsula that lets you access the stuff in the corner. But, he said as long as it blends and we use a push-to-open hinge he'll be ok with it. I think that might be the best use of space rather than doing a super susan or blind corner cabinet. What do you think?

The total space is 22ft long by 10ft wide. The eat-in area currently has a bay window with door to the screened-in back porch. We're taking that all out and replacing them with a sliding door. That will add a couple fee of wall in the corner to support cabinetry. Right now the hutch I have there actually covers part of the window.

Oh, and just one thing I want to add for people with a similar pantry area, I put in these metal wall inboxes to hold magnetic spice jars and all my cutting boards and cooling racks. It's worked out great, but in the new plan we'll have a cabinet above the frig for all this.
