Every slab is differnt. Sort of like snowflakes.
Yes, if the slab you are looking at has blue in it, sure
it could show up once flat on a counter. Does this bother
you? Get a different slab. Get the one you love.
Don't choose something you won't love.

Keep in mind lighting, natural lighting, artificial,
wall colors, floor colors, reflective surfaces... can
all change the perception of the color.

Here are some yellow river granite counters. In a different
room with a differnt cabinet etc... the could look more
gray or more blue or even more yellow. : )
Good luck,

The images below are all yellow river...Notice the variations.

Notice this slab looks really gray

While this looks truly golden yellow

Our yellow river does not have a blue hue even though it has large grey veins flowing through the gold, caramel, and ivory stone. We did end up using a light gray (BM Whitewater) on the walls that has a blueish tone!(A surprise as the sample read pure gray) It is wonderful and makes the stone pop. We LOVE our yellow river and are so happy we made the splurge. I hope you can find the right stone and the perfect slab.
