range hood advice

Good morning everyone! Thought I would probably get a better response here than in the appliance forum. My DH and I are planning a mini-makeover of our kitchen over Christmas - it started with "honey, I want to tile the backsplash" and has turned into a new backsplash and a new range hood. Pic below. What we are planning on doing is tiling from the microwave on the left all around the L, behind the range and then along to the end on the right of the range (about another 4 ft); replacing the flourescent ceiling fixture over the island with something nicer; and removing the old range hood and the cabinet above it and replacing them with a canopy style hood.

We can only install a 30" range hood but have seen styles that we like from GE and Thermador - they are anywhere from 10" to 18" high. Instead of mounting underneath a cabinet or a sofit (which is the usual installation) we'd like to just add a stainless extension piece above the hood to cover the vertical vent (with the Thermador I can get a 6" or 12" inch extension piece that will mimic the look of a soffit or cabnet to completely fill the space, or my handy hubby can make one). So my question is has anyone done this? Just put a stainless extension piece above their canopy style hood rather than a cabinet or having a soffit? I have seen some examples in magazines but wondered if anyone on here had done it and had pictures. DH doesn't like the chimney style hoods for this particular application (plus if we used one we'd have to do something about the screw holes that will be revealed on the cabinets beside the one we are removing.

TIA!
