Pruning in Sacramento

I'm confused about WHEN to prune my fruit trees. They are about 10-12 years old and were neglected for a few years so a lot is renewal pruning.
This is the info I've gathered and I'm mainly trying to follow the sacramento master gardener guidelines for my area. Please correct me if I'm wrong.

Apricot: late summer/early fall, September. (I did this one this past September to bring down the height some, and need to do a second and probably 3rd round to get it to the height I want without cutting off too much at once.)
Cherries: winter, February.
Peaches: winter, February.
Plums/pluots: winter, February.
Quince: winter, February.

I'd appreciate any input as I'd like to finish pruning these next couple of days!
