Could you please tell me the height of the ceiling. I love the beams...don't know if you could do that with 8 foot ceilings.

You could definitely do this with 8 foot ceilings - it would feel cozy. The picture shows a 6-8" coffered ceiling, you would want to stick with a 3-4" coffered ceiling. The ceiling shown here in the Walnut Study is 8'.
