Hi out there!

I'm a newbie gardener. This is the fourth year I've planted something and had it survive. That sounds like more experience than it is. I'm talking two pepper plants and 6 tomatoes my first two years. ;)
For budget reasons I'm actually starting all (well, most) things from seed this year. I'm trying to grow enough that we don't have to buy produce this summer and we can put up a few jars/freeze some things. (Homemade pesto? YES PLEASE!)
I tried growing from seeds last year but not much did well, I started too late, didn't have enough lights, didn't have a fan for air flow or a heating mat, my cats ate half the seedlings...

This year I think I may have started too early. I got all excited and I think I mis-calculated the start date for my peppers. I started pansies, artichokes, asparagus, chamomile, lavender, and some herbs (planning on having those in the windowsill for this spring) last night. Well I had two packets of peppers left from last year that barely produced anything, so I said forget it I'm starting these NOW so I don't get behind. And now I'm thinking it's way too early if I plan on setting them out by mid-May. Agh.

I'm planning on starting tomatoes and eggplant in two weeks. Should I restart a packet of peppers then? Just have a plan to pot up and use a cold frame/Wall of Waters to set out earlier?

When do you all start your seeds?
