The fact that they are white takes them out of the "Rustic" look. If that is not a problem with you great. All you need to do is add more molding around the outside of the cabinet to beef it up a bit.

Chunkier hardware or even a faux hinge could be fun. Especially if you are going to add molding. You can find molding at home depot but you might try to find some at a re-store (habitat for humanity). A lot less expensive.

You could get a flat wrought iron garden gate latch and use that instead of the pulls. You said you were handy. :)

Very nice room. I think that extra molding will not solve your problem in making it more rustic. Since you like the white I would add some pulls that are long and branch-shaped. I would add them to the top and bottom doors.
Painting a different color also entails painting mantle and other woodwork in the room. Can you put a floor lamp on the other side with a white shade to help balance the height. Also love your decorative touch with the fishing baskets. Good Luck

You could also add a decorative brown glaze to it, or you could also add panels of a fab wallpaper into the top sections to the doors, or leave them open and wallpaper the backdrop of the shelving and add some lighting. This will make the piece look visually bigger. And also unexpected, which is always a 'plus' in design!!

You could also do a faux hinge in black wrought iron (or even paint on) like carriage doors.
