I would not do induction for a rental. Most will be unfamiliar enough with it that you will get a high error report from the tenants. Do you have gas available? A basic gas range would be a better choice over induction. Most beach rentals are pretty basic in their kitchens, as the focus isn't on cooking, but enjoying the surroundings. Perhaps cutting the budget further and having nice, but not spectacular, appliances would make the project go easier for you and be easier as a rental as well.

You will get some great recommendations within your budget if you post this on the Appliance Forum instead of Kitchen Forum. Many experts there. Regarding induction in a rental, hmm. I've had two landlord friends have their kitchens set afire by ditzy tenants. You'd more likely avoid that with induction. Induction in vacation rentals seems to be common in Europe. And you will be supplying cookware, yes? I would do it. Also, watch your clearances if you're enclosing the Breville. I wasn't able to swing it. :-(.
