You might still be able to dig and eat them. Time is getting short. Once they begin sprouting, they won't be any good for eating. It is generally not considered good to leave them for another season, as it can promote disease.

At least some do have some foliage just starting above ground. Does that mean it's too late to eat them?

I don't know but I wouldn't think so once they start growing. my son found some when they plowed the garden in town and they hadn't sprouted yet. I too was wondering about replanting them somewhere else.

If they are sprouting, it's too late to eat them. They wouldn't hurt you. But they wouldn't taste good.

If I dig them and move to another spot is that like using them as seed potatoes? Will it lessen the risk of blight? I'd hate to just throw them into the compost pile.

I've done that, and it's worked. But I do believe that there's still a possibility of spreading disease. I suppose it's up to you.
