Climbing Rose 'Winner's Circle' seems disease free and super vigorous.
Perennial Pea, species latifolia, grows locally in the most infertile, sunny places, and is easy from seed.
Any Lonicera sempervirens seem no care,
Gelsemium sempervirens is evergreen and vigorous.
All have downsides.

How about Morning Glories, or Hyacinth Bean Vine?

Does the Lavender Trumpet Vine grow there? It is fast growing here.

One of the no-care vines that I like is passiflora (passion vine). It will spread more and more each year with little care from humans. Your larger property would probably be OK with such a vine, compared to a neighborhood home where one may not want it spreading to neighbor's yards. A side benefit is that it can provide you some nice tasting fruit also.

For a fast growing plant, you should plant morning glories, but be VERY careful, it will quickly overtake any land you give it. My parents planted them decades ago, and they have been the bane of their existence. You cannot get rid of them, or kill them. They are truly beautiful though, absolutely worth every headahe.
