A four inch deep tray should work well. You may have to harvest the castings more frequently than if you used a deeper bin. That's not a bad thing, however.

What do you feed them? Do you start with compost?

I start with goat and horse manure mashed with a little peat. I top feed with coffee grounds, corn meal, and a small amount of goat colostrum (powdered). They devour it!
