Kitchen backsplash dilemma

We are having difficulties deciding on our kitchen backsplash. Both with what to do and how to implement it. Our kitchen cabinets are brown-black, with white laminate countertops (image 4) and white glass fronts on the upper cabinets. We have stainless steel appliances. I was thinking oblong mosiac tile with black/white/brown colors, but we've also discussed putting in white plexiglass.

Our other dilemma is since our house has a totally open concept, how should we let the backsplash end? Our living room is totally open to the kitchen, the only thing deviding the two is the peninsula where we have our breakfast bar (image 2). I had one idea of having the tile come from under the upper cabinets and flow up towards the ceiling. The upper cabinets don't go all the way to where the peninsula starts (image 3), so I'm kind of lost.

I would appreciate all ideas you have, along with photos. I've googled "black kitchen cabinets" with "backsplash" and have some ideas, but, like I said, our main concern is how to implement it with regard to it not looking strange from the living room.
