This is a dilemma. With so many horizontal lines I would be tempted to go with vertical as a contrast. I would use a porcelain subway tile in a very light aqua or sea color laid in an end on end, next to next pattern. Use off white grout. On the left side take it up to the edge of that upper cupboard only. On the right end of the cupboards go the same distance only wrap around to the window area as you have the sink there. I hope this gave you an idea.

I like the idea of the plexi or glass as it will be very minimalistic and no grout lines to keep clean! Sorry- I always have to throw in the practical....You might be able to score or etch some texture to the back of the plexi or glass if you wanted a subtle texture as well. I think you could make a truly unique kitchen that no one else has. However, the plexi will probably not work behind the stove top, so you may have to use glass here. The backsplash should run from the corner on the right to just below the upper cabinets to the left. I hope this helps.

I think the backsplash should stop where the cupboards end and I would select something that was really modern, but had less of a kitchen feel (ie; subway) and more of a decorative mosica feel, that would also compliment a living room. I really like the look below www.2Stone.ca and they have photos, so you may get more ideas.
