East Texas lawn

I would like to sow a new lawn. I would like to know is there any grass that is a hardy slow grower for East Texas? I would love to have one that does well with minimal water after it gets established. My dad used to talk about buffalo grass but I don't have any idea. I have spots of Barbuda grass now and I just can't water it enough to keep a pretty lawn. Any suggestions or advice is appreciated.
