Thanks, I did freeze much of last years bumper crop. I still have two big bags to use, hence the request for new ideas. This years plants are hardening off waiting to go in the ground. Gotta get caught up before I'm up to me eyeballs again.

I have only grown tomatillos once so don't really have any tried and true tomatillo recipes, but a Google search came up with 10 pages of sites with recipes; there are no doubt lots of salsa recipes included, but I am sure you can find other dishes as well. https://www.google.com/search?q=tomatillo+recipes

Check the Harvest forum. Personally, I can mostly salsa with them. On their own, and mixed into many of the tomato salsas (they can safely sub).

I'd have to dig a little for the recipes but will do so if you're interested. The straight tillo salsa my husband does with smoked onions, Annie's salsa for a milder, and also a chipotle one.

Thanks all! I do have some good salsa recipes, and maybe this year I will put some up. That's a good idea. Was just hoping someone had come up with different uses. Wonder how they would do as Fried Green (not)Tomatoes? Which are great on BLTs, BTW.
