The pepper yield will depend on many factors, so it's hard to say. Even plants that are now on clearance may have had their growth affected by not having been handled well from the beginning.

With a good growth conditions, even one pepper plant may produce plenty of peppers to be eaten by one family and even given away to friends and others. This is particularly the case with tobasco peppers.

However, knowing that you'll want to preserve or pickle them, you can do with more plants also.

If jalapeno is not too hot for you, you may like that as a pickled pepper also.

Far, far too many variables to say how much each plant will produce. But since you like pickled peppers the more plants you grow the better. :)

One jalapeno grown in hot Southern California will grow into a large bush and will produce many more peppers than we would need. We have one such pepper now. Got it at HD and it's already produced 6 peppers. It's still a baby. It is a perennial in this climate. You don't say what planting zone you are in. I would assume 4 or 5 pepper plants would produce enough for all those jars you want to pickle.
