Need kitchen help. Granite or Quartz? Cherry cabinets.

Started to wish I hadn't done cherry when looking for granite. It's so hard to find a granite that I find acceptable - my taste leans to marble and it just won't work in our kitchen My husband who cooks doesn't clean up after himself and may be cooking when I've already gone upstairs for the night . These are the granites that looked okay with the cabinets. Kind of a peachy Cielo D'oro. My concerns are that the lower half is darker. My fabricator said he can work around that but that would be an additional charge. My main issue is fear that once installed it will be too busy or too heavy or too dated looking. Our cabinets look like this

I am so worried about a shock with the granite that I'm considering Quartz. my friend has Silestone Tiberis Sand which looks good with my cabinets.

Much creamier in person.

This would be the safer choice cause I know what this looks like. Busy granites are visually distracting to me and the quartz is calm although a little boring. Will it look too modern for my cabinets? Wish I had found this site earlier. They are starting today and I don't have counters or hardware picked out!
