Suzi is dead on with her comments. In fact, have some fun with the cuttings you prune off by rooting them over the winter. It will keep you involved with figs while your trees are sleeping. Plenty of info on rooting figs in the forum. You can make a few people happy in the spring by dispersing your newly rooted trees. One thing with the shuffle, make sure to pot up in a container you can handle. Those big pots can get heavy real quick.

I used to live with a good friend in eastern MA(zone5-6) who had two fig trees grown outside. His grandfather, who was sicilian, planted them before passing away. He would bury them the weekend after Thanksgiving and dig them up in the spring. It was a family ritual that I participated in several times.

They were planted at the edge of the garden. In fall we'd prune them back a bit. Dig a trench in the garden the length of the tree and lay it in the hole. Cover it with plywood(to maintain the air space around it) and the dirt from the trench. We'd keep the roots short on the plant furthest from the garden edge so you could lightly free the roots and push the whole thing over. The roots on the garden side would bend down and stay mostly intact.

It worked surprisingly well and we got huge crops of figs. Unfortunately I don't know what variety they were, they were green on the outside white/slightly translucent inside. We'd get two crops. As good as any other fig I've ever had, but I'm no fig aficionado.

I agree with all of the above, only thing to keep in mind if you're going to use the greenhouse method is that it should not be heated, as long as the temp doesn't dip below 40F so that the plants go through natural dormancy

Not to mention you could actually plant them in there instead of bringing them in and out :)
