It's far more comfortable to sit in a chair with a back. If you are going to have a quick breakfast on your stools and use your dining room for all other meals, by all means, get backless. Otherwise, go with a back.

I voted backless although let me qualify that by acknowledging many low (lumbar support) back styles look rather cool! I'm just not keen on bulky, heavy backs that occlude openness.

yes, low backs. and swivel if there are 3 or more in a row, otherwise the center person has a hard time getting up and down.

back = comfort, but low back or backless = no visual obstruction of pretty countertops/kitchen; agree with above on swivel to improve ease of getting in/out of chair, and also to turn around and converse with people in the dining area if needed
