Italian rose beans- not pink?

I am growing beans called Italian Rose from Burpee for the first time. They are really prolific so far but the pods are only green- no beautiful red speckles.

I'm a newbie to growing this type of flat/roman bean. Do I just need to wait for the color to develop? The beans inside are still immature and the pods are about 4-6 inches long, but can I pick them to eat just the pods at this point?

One of my dogs has developed an obsession with trying to eat them off the plants, so I'm kind of asking if I should pick them now before she can get them all or if I need to fence in the bed and wait until they turn red and mature.
