Cabinet Remodel Space Utilization

I will be installing a wall-oven, wall microwave and possibly a built-in espresso machine in the existing 36" space that my refrigerator now occupies. We are having a custom cabinet built to match existing, but I'm wondering if I should have wide trim and center a 30" oven or hold it to one side and have a small cabinet made for slide in items like sheet trays? Any pictures would be good too:)
